KEEP OUT THE COLD WITH OUR LATEST CHRISTMAS RECIPE VIDEO!

A different take on our sprout bhaji idea from last year:  Traditional Christmas favourites, Kushi style!

We had such a great response to last year's sprout bhaji video from customers and regulars to the restaurant, that we've bowed to pressure, and made another!  This time, a curry dish containing your favourite Christmas trimmings: turkey, sprouts, leek and cranberry sauce - all in a spicy sauce made with ginger and garlic.

Simply follow the link above to the video on YouTube, and follow the method using the ingredients list below.  Again, we've not included the ingredients list on the video for simplicity.  

This year's recipe is a delicious, slightly spicy - and very buttery - curry containing large chunky pieces of turkey, along with sprouts, leeks and onions.  Topped with a garnish of cranberry sauce, which adds a festive touch that works rather well.

Best served with rice or any type of bread, it'll bring a whole new dimension to the average Christmas fayre.

We had a huge amount of fun making the video - so we hope you enjoy it as much as we enjoyed filming it.  Thanks also to our friend Chris for his expert camerawork!

Ingredients list:

This ingredient list is to be used in conjunction with the video above.

Serves 2-3

Whole spices - for the fragrant water mixture:

4 bay leaves

1 Star Anise

2 Black Cardamon pods

4 Green Cardamon pods

1 piece of cinnamon (cassia bark)

310ml cold water

Rest of the ingredients for the final curry:

60 ml mustard oil (use vegetable oil if you can't find mustard oil)

1 1/2 tsp garlic paste

2 tsp ginger paste

700g boneless turkey breast

140g butter

250g onion, finely chopped

70g leeks, finely sliced

1 1/2 tsp salt

1 1/4 tsp cumin seeds

1/2 tsp cumin powder

1 1/2 tsp coriander powder

1 1/2 tsp turmeric powder

1 tsp clilli powder

120g sprouts, halved

3 whole green chillies, cut in half lengthways.  Keep the seeds.

75g chopped red, green and/or yellow peppers

140g fresh tomatoes, quartered

1 tsp cranberry sauce to garnish


FAQ (Frequently asked questions)

Where can I get mustard oil?

Try shops in areas with a high Asian population.  Alternatively, try normal vegetable oil - although the mustard version does add that extra something.

It's not very healthy is it?

No.  But then, it is Christmas - and very few things are!  Seriously, we would hope that anyone trying this recipe recognises that it the sort of meal to be eaten very occasionally and as part of a nutritionally balanced diet.

Can you provide any support for anyone trying the recipes?

Sadly not, due to other commitments.  Everything should be self explanatory though.

Can you help me to work out why the video isn’t working!

We’ve done everything we can to make the video work properly – but regret we are unable to provide technical help and support.  YouTube is a reputable site, and we know it has worked on every computer we've tried it on.  The speed at which the film buffers is dependent on your broadband connection speed.

The film’s a bit basic isn’t it?

We’re not film-makers.  We’re also not TV producers.  We’ve kept the film as “no-frills” as possible, to give you a good idea of how to follow the recipe.  We’re not out to win awards!!  

Will you be doing any more videos like this?

Where is it filmed?

It is filmed in Mr Haydor's kitchen at home.  It makes a change from the restaurant kitchen! 

What equipment do I need?

A substantial saucepan is the main piece of equipment.  You'll also need measuring spoons for the spices, and general kitchen tools.  Please make sure you handle and use hot oil sensibly and safely.

is  the recipe suitable for vegetarians?

No.  Sorry, not this year.  (Obviously!!)  But the 2006 sprout  bhaji video is 100% vegetarian.
