Let’s be honest. Brussel sprouts are not the most exciting of Christmas fare. They’ve become something of a joke over the years – and many people will be tucking into them this festive season, and not enjoying them one bit! But, we’re here to help. We’ve created a recipe which has transformed the humble sprout into a flavoursome curry house favourite. The bhaji. |

Crisp, golden and deep fried, our Brussel bhajis are similar to the popular onion bhajis enjoyed by fans of Asian food everywhere. They taste so good in fact, that even people who hate Brussel sprouts can’t get enough of them. Simply follow one of the links above to watch a two-minute video on how to give the much maligned sprout an Indian makeover. The ingredient list is below for your reference (as we’ve not included quantities in the video for simplicity). So get cooking – and Merry Christmas!!! Ingredients list: (printer friendly version here) This ingredient list is to be used in conjunction with the video above. Makes approx 12 bhajis Vegetables: 200g sprouts, finely sliced 225g leeks, finely sliced 250g onion, finely sliced Whole spices: 1 ½ tsp whole coriander seeds ½ tsp fenugreek seeds ¼ tsp shahi jeera (if available) Ground spices: 1 tsp turmeric powder 1 tsp coriander powder ¾ tsp chilli powder ½ tsp cumin powder 1 ¼ tsp salt Other ingredients: 150ml water 250g “gram flour” (available from most ethnic stores and some supermarkets – see FAQ) Vegetable oil for deep frying
FAQ (Frequently asked questions) What is gram flour? Gram flour is an essential ingredient used for making bhajis. It is made from ground chickpeas and is widely available from Asian stores. Some supermarkets are also stocking it. It can’t be substituted for any other type of flour, as it doesn’t give the right consistency and taste. I click on the link, but it won’t show the video straight away! The time it takes to show on your computer depends on that sort of internet connection you have. The file sizes are shown, and the smaller the file size, the faster it will be to load. But – the smaller the file size, the lower the quality of film. Can you help me to work out why the video isn’t working! We’ve done everything we can to make the video work properly – but regret we are unable to provide technical help and support. It has been formatted in the widely used .wmv format and we know it has worked on every computer running Windows which we have tried it on. We’d love to be able to help further, but simply don’t have the time – and if we’re honest - the technical knowledge! The film’s a bit basic isn’t it? We’re not film-makers. We’re also not TV producers. We’ve kept the film as “no-frills” as possible, to give you a good idea of how to follow the recipe. We’re not out to win awards!! The reason we’ve used large text and bold captions is for users who have dial-up connections and can only download the lower quality versions. We want to be accessible to all. Clean, efficient, hygienic – but not the prettiest of places. We don’t all have a kitchen like Delia Smith! What equipment do I need? For brussel sprout bhajis you’ll need a large mixing bowl, and a saucepan containing enough oil for deep frying. Please make sure you handle and use hot oil sensibly and safely. Are the recipes suitable for vegetarians? Yes, absolutely.
