In the months before the book was published, we had an email from Paul in Coventry, who was keen to try some of the recipes, and provide us - as authors - with some feedback. We readily agreed and here are his comments:

"I have recently followed the recipe for the basic lamb balti from your book, and I must say that what I produced could have come straight from a (very good!) balti restaurant. I have tried many recipes from other books which claim to have "secret" recipes used in restaurants, only to find that the results are poor. I must admit to being sceptical about the claims that the recipes in
the Balti cook book would enable the reader to cook a "proper" balti at home. It does, however, appear that Mr Haydor has shared his cooking methods with the rest of the world. I can only thank him for that and wish him every success.
