This isn’t really a question – more an observation.  We received the following three messages within days of each other, and think it illustrates the point quite nicely that everyone expects something different from their curries.  It’s quite an interesting mixed bag of views – and a (probably co-incidental) east-west split!

“I’ve tried making the basic balti, but was surprised by the amount of oil in the recipes or at least it seems like a lot of oil to me.  I tried the recipes again, but using less oil, and the results were as equally good.  Dhansak is my favourite, as it seems the least oily of the lot”  Allan, Hockliffe, Bedfordshire

“I can’t thank you enough for the recipe for the Balti Pathia.  Every time I go for a meal in a restaurant, I order it because I love the taste but always find that there’s far too much oil.  Sometimes its drenched in the stuff and I have to spoon it away (I don’t know what the waiters must think!).  Congratulations on a recipe which keeps the flavour but doesn’t over-do it on the greasiness.”  Neal, Kidderminster

“There’s not much oil in the base sauce or recipes, most curries I have had are oily and the surface of the base sauce recipes are swimming in it.”  Lee, South Wales
