Coconut powder: What exactly is the difference from desiccated coconut? 

Coconut powder is used in the “Speciality Curries” section – and is one which can cause some confusion.  Many people instinctively think of powdered coconut as being the desiccated type – a familiar sight on supermarket shelves.  The coconut powder needed for these recipes though, has a flour-like texture and is also sometimes labelled “coconut flour”.  Rarely seen in supermarkets, it has a smooth texture, and “dissolves” when put into liquid – unlike its desiccated counterpart, which stays rough and flaky.  Specialist Asian shops are a good place to go for this.  A photograph of the coconut powder will appear here soon – although please note that we do not necessarily endorse a particular brand or manufacturer.  Other brands are available.
